Most fish processors sell STPP treated freshwater lakefish  (sodium tripolyphosphate)  which is added through injection or vacuum tank tumbling, resulting in a loss of flavor and a degradation of cooked product quality. These processes  & over-glazing reduce the weight per case by 5 -15%.

 

In addition, there are more and more reports of adverse side-effects in people with auto-immune disorders or sodium intolerance, experiencing negative health issues from eating food treated with STPP. FINFISH enables you to have healthy and delicious lakefish options.

Indicators that fish have been injected with STPP

 

1. The frozen fillet will appear to be coated in white, as though freezer burned. It is actually sodium- like salt on a winter boot (Fig. A) 

 

2. Fillet immediately shrinks upon contact with heat (Fig. B)
 
3. A milky liquid forms around fillet in (Fig. B)pan 
 
4.  Fillet easily splits apart- especially in thinner areas  (Fig. B)
 
5.  Skin appears slimy and flesh bulges away from skin  (Fig. C)
 
6.  Portion size is significantly reduced
